  • Mint-Chocolate and Vanilla Bean Frozen Yogurt

    Hi, my name is Missy and I have a god-awful sweet tooth…Phew! I feel so much better sharing that!  Let’s celebrate with some ice cream. :) Okay, okay, I’ll behave…how about frozen yogurt?!  I’ve made a couple different versions of these frozen yogurt popsicles this week because they are so quick, easy, and unbelievably good…with minimal guilt!  I wanted to get this up before the weekend so that hopefully you guys can splurge without the guilt too. :)

    This frozen yogurt is really rich, creamy, and surprisingly low in fat and sugar. I whipped this up in less than 10 minutes just after lunch so that it would be ready when the big monkeys got home from school. It is so quick and simple, a perfect snack for kids.  Greek yogurt is a staple in my house, we keep the family sized containers of both the plain and vanilla flavors.  With this basic recipe, you can add different ingredients and try out dozens of flavors!

    Mint-Chocolate and Vanilla Bean Frozen Yogurt:

    This recipe makes about 6 frozen popsicles…

    • 1 Tablespoon fresh mint, finely chopped
    • 2 Teaspoons vanilla paste or 2 vanilla beans, seeded
    • 2 Tablespoons amber agave syrup
    • 1/2 cup good quality milk chocolate, chopped
    • 1  and 1/4 cup Vanilla Greek yogurt
    • 3 Tablespoons heavy cream
    • 3 Tablespoons 2 % milk

    I have not tried this in an ice cream maker yet…it’s on the schedule for the weekend!  I’m hoping to decrease the heavy cream in a version for the ice cream maker, but it is really necessary to get popsicles that come out creamy, not icy.  You really won’t believe that these are made from yogurt once you try them, enjoy and eat well!
